Hello,
welcome after weekend,
I am not sure if by "header" you mean title of the message, if so - it is translatable on module configuration page: https://i.imgur.com/0q70Yvv.png
But from context of your message it looks like you reffer to this part of message: https://i.imgur.com/uODgPHc.png

If so, this part of message is translatable with prestashop's default "translation" tool available under "international > translations" menu: https://i.imgur.com/BhxIVfi.png
This is how to proceed:

prestashop 1.7.x / 8.x

  1. go to international > translations
  2. from "Type of translation" dropdown select "Email translations"
  3. from "Select the type of email content" dropdown select "Body"
  4. from "Select your theme" dropdown select "Core (no theme selected)"
What's the difference between "core (no theme selected)" and "theme emails"  ?
Email templates from the modules can be stored in two locations.
    1. In original module directory
    2. in theme directory
if your theme have /modules/ directory with module directory (in this case "defpay') and if this directory has "emails" subfolder - prestashop will use these files to build and send emails
this means that during configuration of "select your theme" option you have to select theme that you currently use, otherwise you will not see changes in emails.

  5. from "Select your language" select language of email translation that you want to alter
  6. hit "modify" button
  7. you will be redirected to page where you can find all emails that shop sends:
    - Core emails (default templates that are a part of prestashop installation)
    - Module emails (emails templates that are a part of modules)
  8. on list of "module emails" section and click on "defpay" module: https://i.imgur.com/gxp7jhQ.png you will be able to translate it :)

in prestashop 1.6.x it is very similar

  1. go to localiztion > translations
  2. from "Type of translation" dropdown select "Email translations"
  3. from "Select your theme" dropdown select "Core (no theme selected)"
  4. from "Select your language" select language of email translation that you want to alter
  5. hit "modify" button
  6. you will be redirected to page where you can find all emails that shop sends:
    - Core emails (default templates that are a part of prestashop installation)
    - Module emails (emails templates that are a part of modules)
  7. on list of "module emails" section and click on "defpay" module: https://i.imgur.com/gxp7jhQ.png you will be able to translate it :)
